Mandarin cake

4 mandarins (2 with peel), half a cup of plain oil not olive oil, 2 eggs, 1 tablespoon of cornstarch, 1 teaspoon of baking powder, 2 cups of sugar, 2 cups more or less of self-rising flour, butter for the loaf pan.

Put in the blender the oil, the eggs, the tangerine without seeds, the peel of 2 tangerines, put them in that order, blend. Once it's blended add the sugar little by little and keep blending, add the cornstarch and the baking powder, all in the blender. Put it in a bowl and add the flour beating with a heavy fork or a mixer, it has to come out very thick but not compact. If you like, I add orange and grapefruit peel that I prepare myself. Oven heated to the highest setting and once the cake goes in it's turned down to the lowest, don't open the oven for 45 minutes because if you open it it will be ruined. Loaf pan buttered and floured.

Fruit: 1 peel of a navel orange, 1 of grapefruit, 1 of tangerine. Boil with 1 teaspoon of salt, 2 or 3 minutes. Throw out the water and boil 2 more times but with nothing added, clean water.

Put in a cup of sugar and one of water, boil until it becomes a syrup, the peels cut into little strips are added and left to boil again until they caramelize, it's kept in a glass jar in the fridge. I put little pieces on the cake. Enjoy!
